Each knife is available in two high-performance steel options:
- X12MF Tool Steel (60 HRC) — hardened for superior edge retention and durability under heavy use. The nitric acid etching adds a dark, distinctive finish while protecting the blade from wear. Hand-finished to 0.2 mm behind the edge for a sharp, aggressive bite.
- EN 1.4116 Stainless Steel (58–59 HRC) — cryo-treated for enhanced stability and corrosion resistance, ideal for humid kitchen conditions.
Every Kiritsuke is hand-sharpened and precisely ground to ensure smooth slicing performance on vegetables, meat, and fish alike.
