This model is available in two premium steel options, each selected for performance and character:
- X12MF Tool Steel (60 HRC) — high-carbon steel known for extreme hardness, stiffness, and superior edge retention under demanding use. Delivers clean, aggressive slicing for chefs who expect professional-grade performance.
- EN 1.4116 Stainless Steel (58–59 HRC) — refined, corrosion-resistant alloy that provides excellent cutting smoothness and easy maintenance in humid or high-usage kitchens.
Both versions are hand-finished and ground to 0.2 mm behind the edge, giving the blade an aggressive, precise cut that glides through meat and dense produce alike.
The stained ash wood handle, secured with steel pins, is treated with Danish oil and polished with carnauba wax for a secure, tactile feel and long-lasting protection.
