Description
The Kiritsuki has long been a blade of mastery — where balance, control, and precision define the craftsman behind it. SAVAKNIFE brings that legacy into the modern kitchen, fusing Japanese form with Ukrainian determination.
Each Kiritsuki is forged by hand and available in two premium steels:
- EN 1.4116 Stainless Steel (58–59 HRC) — highly corrosion-resistant, easy to maintain, and perfect for everyday culinary work.
- X12MF Tool Steel (60 HRC) — a tougher, high-carbon alloy with exceptional edge retention and wear resistance, favored by those who demand endurance and strength under heavy use.
Both versions are ground to a razor-thin 0.2 mm behind the edge and hand-sharpened for a clean, aggressive slice that glides through meat, vegetables, and fish alike. The result is a knife that rewards precision and punishes hesitation.
Two handle options complete the blade’s personality:
- Oak Wood Handle — octagonal, oiled with tung oil and finished in carnauba wax, offering warmth and a natural, confident grip.
- ABS Handle — moisture-resistant, durable, and hygienic, ideal for high-intensity kitchen environments.
Balanced for fine vegetable work, sashimi preparation, meat trimming, or daily cooking, the Kiritsuki moves like an extension of the hand — steady, deliberate, and unmistakably sharp.
